Lemon Poppy Seed Cookies

These Lemon Poppy Seed Cookies are the epitome of summer. They’re perfect to pack-up for your next picnic.

Recipe Ingredients:
3 ½ cups gluten free flour (I used Bob’s Red Mill 1 to 1 baking blend)
1 ½ tsps baking powder
¼ tsp salt
2 tsp poppy seeds (plus more for garnish)
1 cup butter, very well softened
1 cup sugar
2 eggs, room temperature
1 tsp vanilla
1 lemon, (zest for the dough & juice for the glaze)
1 ½ cups confectioner’s sugar, sifted
